Custom-made by <a href=\"https:\/\/punachocolate.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Puna Chocolate Company<\/a>, the chocolate peppermint bar boasted chocolate created exclusively from Hawai\u2018i Island cacao beans, grown on small farms using regenerative practices.<\/p>\n\n\n\n<p>\u201cWe have 18,000 trees maintained by just six to seven people, and the only reason we can do it is regenerative farming and the plants in the cacao ecosystem that work together,\u201d says Adam Potter, who founded the company with husband Ben Vanegtern in 2012. \u201cThey\u2019re doing a lot of work for us.\u201d<\/p>\n\n\n\n<div class=\"wp-block-columns alignwide are-vertically-aligned-top is-layout-flex wp-container-core-columns-is-layout-9d6595d7 \/><\/noscript><\/figure>\n<\/div>\n<\/div>\n\n\n\n<p>Although Potter notes he \u201calways had an affection for botany, food, and chocolate,\u201d and Vanegtern has \u201ca Wisconsin farmer background,\u201d the couple never envisioned a future as cacao farmers or chocolate makers\u2014or, more recently, cafe and restaurant owners. Potter, now a lieutenant colonel in the U.S. Marine Corps Reserve with almost 27 years of service, and Vanegtern, a former U.S. Navy communications electrician, were living in San Diego when they started looking at large tracts of land on Hawai\u2018i Island in 2011. \u201cI thought maybe in 10, 20, or 30 years, we\u2019ll square away enough money to do something while we do our day jobs, \u201d Potter says.<\/p>\n\n\n\n<p>When a 65-acre lot in P\u0101hoa came up for sale for $110,000, they snapped it up. \u201cWe didn\u2019t know what to do with it for two years\u2014we knew [not to] build houses, since there was still the 30-year lava flow going into the ocean, which we thought could go on forever,\u201d Potter says. A year or so later, he spotted \u201cfootball-shaped squash\u201d at The Locavore Store in Hilo, which he learned were cacao pods. \u201cThe owner said, \u2018These grow here, but you\u2019ll need thousands of trees, and you\u2019re not going to open them up and have Hershey\u2019s Kisses pop out\u2014you have to ferment them right,\u2019\u201d Potter recalls. \u201cI also learned [cacao trees like being] in a jungle, so I don\u2019t have to clear everything. On previous spread, co-founder Ben Vanegtern harvests cacao in Holualoa.<\/figcaption><\/figure>\n<\/div>\n\n\n<div style=\"height:15px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>\u00a0They also cultivated their expertise: Vanegtern moved to Honolulu to earn a bachelor\u2019s degree in tropical plant and soil sciences from the University of Hawai\u2018i at M\u0101noa in late 2015. After a \u201cwake-up call\u201d from a P\u0101hoa lava flow that threatened their farm earlier that year, they started planting thousands of seedlings on other farms around the island, too. \u201cWe said, \u2018Pay us to plant it, and we\u2019ll just visit the trees when we can, and then they\u2019re your pods to sell to us.\u2019 We grew to six or seven farms, two of which we pretty much operate completely.\u201d<\/p>\n\n\n\n<p>A Central and South American native whose Latin genus name of <em>Theobroma<\/em> means \u201cfood of the gods,\u201d their cacao now thrives under a tree canopy of native rainforest and introduced tropical fruit species. It also flourishes with help from gliricidia, a companion tree known by its Spanish moniker <em>madre de cacao<\/em> (mother of cacao), \u201ca giant legume that pulls nitrogen from the air and feeds it to 10 to 20 trees around it,\u201d Potter explains.\u00a0<\/p>\n\n\n\n<p>Chickens play a similarly symbiotic role at the farms. \u201cThe trees will produce dense leaves on the ground that will pack with water, so you\u2019ll get mold and fungus, and Chinese rose beetles will hide under the leaf litter by day. But if you have chickens, you won\u2019t have the beetles or the moisture that gets retained. The duration and temperature of fermentation, drying, and roasting all play a role in how the resulting cacao nibs, and the chocolate created from them, will taste. Similar to wine and coffee, the terroir of the areas from which Puna Chocolate Company sources its cacao\u2014P\u0101hoa, Hilo, Waipi\u2018o Valley, H\u014dlualoa, Kealakekua, and N\u012bnole\u2014also affects the flavor. \u201cWe have about 10 different labels, including single-district and single-farm chocolate, and it all tastes very, very different,\u201d Potter notes. In 2018, if the eruption had gone on one more month, the P\u0101hoa orchard would have been dead. Farms will eventually recover, but in the meantime, we have all these others growing.\u201d<\/p>\n\n\n\n<p>\u00a0Found amid former pasturelands and rocky lava fields, some of the farms have required substantial soil regeneration. Deep soil again. Every year, we have to make it a little deeper than the year before.\u201d<\/p>\n\n\n\n<p>\u00a0Although cacao was introduced to Hawai\u2018i in the mid-1800s, when German doctor William Hillebrand presented it to King K\u0101lakaua and began growing it in what is now called Foster Botanical Gardens, commercial-scale farming only began in the late 1990s, initially on O\u2018ahu and Hawai\u2018i Island.
